Freshly grated coconut
Chop the tomatoes into small pieces.
Fry the dates and keep it aside.
Heat oil and put red chilies to it.
Immediately add crushed ginger and turmeric powder to it.
Then add the chopped tomatoes and salt; Cook it for some time. You may add little water to boil the tomatoes to a thick paste consistency.
Put fried dates, grated coconut and sugar and boil it on medium fire for 8/10 minutes in a closed vessel.
Tomato khajuri khata
is ready to serve, Garnish it with coriander leaves.
